Pumpkin Pepper

Last Friday, the boys were finishing up breakfast as I started to prepare a lunch box for an afternoon out at the Reston Farmer's Market.  I was about to cut up a green pepper when I remembered a picture I saw on Pinterest of a pepper with a jack-o-lantern face carved into it and thought I'd see what the boys thought before slicing the whole thing up for lunch.  They LOVED it (excluding Owen of course who refuses to try a pepper)!  Oliver asked if he could eat it like that so I gave it to him, assuming he might take a bite or two and then hand it back.  He kept eating and eating, smiling as he worked toward the eyes, nose and mouth.  Spencer wanted some too and grabbed it for a bite, which lead to fighting over the prized pepper!  Luckily I had a second one and cut it the same way.  Those two chomped the peppers up until there was only about a quarter of each one left.  How's that for a fun way to eat veggies!
